VIVALTUS

VIVALTUS

GRAPE: Tempranillo (98%) y Cabernet Sauvignon (2%).

APPELLATION: Ribera del Duero DO.

VINIFICATION: The 2018 vintage represents a step forward in the creation of the Vivaltus project, with more precise winemaking and a better understanding of the different terroirs that make up our wine. After a TRIPLE SELECTION of the grapes (in the vineyard during the harvest, on the selection table bunch by bunch and by an optical selector grain by grain), each plot is individually vinified using GRAVITY throughout the process. Fermentation with indigenous yeasts and with minimal intervention. Assemblage after Malolactic fermentation of the different plots, orientations and altitudes and of the different soils that compose them (clayey, mineral, clayey loam, or sandy…) sharing these habitats with forests and mountains of conifers, oaks, aromatic plants, junipers…, to later move into barrels. 95% of the volume: 11 months in French oak barrel (225 L.) 15% new, the rest 1 and 2 years. 5% of the volume: 11 months in Terracota Amphora.

TASTING NOTES: Extraordinary nose, with black fruits and balsamic and spicy touches, very complex, mysterious and attractive, with an explosion of aromas that open little by little as the minutes pass in the glass. In the mouth we find a very elegant, silky, smooth and highly complex wine, having achieved in 2018 a greater Atlantic component than in other warmer vintages, with magnificent acidity and freshness. This whole set gives us a feeling of balance and freshness and a lot of elegance, with a very long and hedonistic finish. In short, a great world-class wine.

FOOD PAIRING:  Ideal for grilled red meats, stews, lamb and small game. Elegant dishes as braised beef cannelloni.

PRODUCER:

The history of VIVALTUS is closely linked to the origin of people, grapes and ideas. In those ingredients is where it all begins. That is the meaning of our continuous effort to achieve the highest quality and to create an exceptional wine that excites.

Ramón Martínez, Jesús Yllera and José Yllera: three men with a long family winemaking tradition who joined forces in the 1980s to share a challenge, in the spirit of doing something different, and better, in the Rueda region.

The Yllera family, descendants of a long winemaking family tradition. Ramón Martínez, grandson of the founder of Bodegas Berberana in La Rioja. They were united by a common project that they expanded over time, going on to make wines in other DOs and PGIs.

Today it is the brothers Marcos and Carlos Yllera who head the winery’s team, together with Ramón’s children: Beatriz, César and Montxo Martínez, the latter also an oenologist. Together, they built their passion for producing a unique, different, exciting, and timeless wine: a true icon.

In the 2010 they began their search for excellence in Ribera de Duero, one of the appellations with the greatest potential in Spain. They share this project with a renowned master: Jean-Claude Berrouet, considered by many as the finest winemaker in the world.
