GRAPE: Tempranillo

APPELLATION: Ribera del Duero DO.

VINIFICATION: Bunch selection table, destemming and subsequent grain selection. Maceration at controlled temperature, alcoholic fermentation in 50 hl and 100 hl French wooden vats. Malolactic fermentation in French oak barrels. Aged 14 months in French oak barrels and 10 months in Foudres.

TASTING NOTES: Fine leather and black tea notes frame currant, clove and graphite flavors in this savory red. The muscular tannins are well-integrated, while balsamic acidity lends freshness. Austere, but exhibits depth and balance.

FOOD PAIRING: Grilled lamb chops, suckling pig, Manchego cheese.

PRODUCER:

This new-to-the-scene, premium winery is located on the ‘Golden Mile’ in Ribera right next to the legendary Vega Sicilia.  This is the most sought-after terroir in the entire, already-popular appellation.  That land, combined with careful, modern winemaking makes is making this boutique Bodega very, very special –  an up-and-coming superstar. Since its foundation, the philosophy and objectives of Tábula were well defined, the main thing was the vineyard, a 22-hectare estate between Olivares and Valbuena de Duero, where the winery is built. Later, the “La Morejona” farm will be incorporated, with an area of 4ha and planted in 1959 in Roa de Duero, and other farms in La Horra and Anguix, until a total of 70 ha are currently completed. Being one of the differentiating characteristics respect for the fruit and the search for the essence of our terroir, the terroir, it is in the vineyard where our wines are born.
