EL CASTAÑAL

 

GRAPE: Mencia.

APPELLATION: Bierzo DO.

VINIFICATION: This wine is elaborated in a completely traditional way, from the harvest to the grain-by-grain destemming. Fermentation in open French oak vats, introducing the unpressed grapes together with dry ice, making a pseudo carbonic maceration to enhance the fruitiest part of the plot.
Later, wine rests in French oak barrels, where looking for a fine and subtle contribution of the wood, for approximately 14 months, during which time the mineral traits of the wine settle until a rich subtlety and elegance are achieved.

TASTING NOTES: This wine represents the classicism of Mencia, pleasant and with aging capacity. Tons of black cherries, blueberries and lavender. Full-bodied, round, juicy tannins and a glossy finish. Delicious.

 

FOOD PAIRING:

Perfect with game, roasts and cured meats, burguers or cheese. Also perfect for any kind of stew.

PRODUCER: Casar de Burbia is a winery that focuses on quality in the excellent expression of its wines, proof of the constant efforts made to capture all of the essences provided by the privileged terroir of El Bierzo.

They are a family-run winery from the region El Bierzo (Spain), which has been making wines in the traditional way for more than two decades. Their wines are made with Mencía and Godello grapes from their own vineyards (27 Ha) located in the Camino de Santiago at an altitude of 900 meters over the sea level.

The vineyard is arranged into 42 plots, classified according to their altitude, orientation and soil characteristics. They are artisan and limited. Experienced in the winemaking process and knowledge of the Terroir.
