GRAPE: Mencia.
APPELLATION: Bierzo DO.
VINIFICATION: Hand harvested, 50% whole cluster. Harvesting is carried out by hand and crushing also follows a traditional method. Alcoholic fermentation at controlled temperatures of 25ºC in small 10,000L. vats. Ageing and malolactic fermentation takes place in French oak barrels for a minimum of 12 months.
FOOD PAIRING: Beef burgers with blue cheese, barbecued beef with dry marinade, braised lamb shoulder with red-wine sauce and beets, duck Salad with straw-berries, filet mignon with peppercorn sauce, Mexican-style chicken, rib-eye steak with parmesan and salad, tortillas with steak and grilled vegetable and soups.
TASTING NOTES: This wine boasts a vivacious, quite extraordinary colour; the combination of violet highlights and brilliant hue indicate that ‘Hombros’ has the right level of acidity needed to age with elegance. The nose displays very fine ageing notes of vanilla, coconut, chocolate, and pipe tobacco, accompanied by plenty of fruit compote, all reaching a perfect balance. Casar de Burbia is a winery that focuses on quality in the excellent expression of its wines, proof of the constant efforts made to capture all of the essences provided by the privileged terroir of El Bierzo.
They are a family-run winery from the region El Bierzo (Spain), which has been making wines in the traditional way for more than two decades. Their wines are made with Mencía and Godello grapes from their own vineyards (27 Ha) located in the Camino de Santiago at an altitude of 900 meters over the sea level.
The vineyard is arranged into 42 plots, classified according to their altitude, orientation and soil characteristics. They are artisan and limited. Experienced in the winemaking process and knowledge of the Terroir.
