GRAPE: Verdejo.
APPELLATION: Rueda DO.
VINIFICATION: Harvest takes place during the cool night hours to maximize the aromatic expression of the Verdejo grape. Maceration controlled at room temperature for 15 hours to extract all the aromas of the Verdejo variety. 19 days fermentation on lees in 20,000-liter-stainless steel vats with temperature at 13C/55,4F. 3% fermented in Neutral French oak (4 months) wine added.
TASTING NOTES: Greenish yellow with bright green reflections, very attractive. The nose is powerful, dominated by balsamic aromas with herbal notes and background of peach and pineapple. Tasty, balanced and fresh. Persistent long aftertaste of a stream of fruit.
FOOD PAIRING: Avocado and shrimp, bagel with smoked salmon, apple and two cheeses, boiled lobster , bouillabaisse and rouille sauce with basil, ceviche, ,chicken escargots à la provençale, grilled fishes.

Bodegas Valdehermoso is headed by David, an agronomist engineer based on Nava del Rey town (Rueda appellation), well good connoisseur of his homeland (Castilla y Leon).
David and Eva López (Cuveé) maintain a personal friendship from childhood which makes pleasant business relations.
David´s family have been wine-growers since 1920 and they used to sell their quality grapes to the most important and well known wineries from the Rueda region. In 2011 they decided to build their own winery and today have one of the top wines in the region. They own fifty hectares of vineyards in just one plot surrounding the winery so their harvest also takes place in the best conditions.
The market recognition of the quality of their white wines is the result of the complex preparation and careful selection of their homegrown grapes.
